i second the buffet at bellagio.  of course, there are also the celebrity chef restaurants. . even bourdain had relatively nice things to say about them in his vegas episode of "no reservations"; they serve a purpose of introducing people to the idea of higher dining- he ate at mesa grill and bouchon.
 
 in-n-out burgers is a must though.

If you like seafood,the Rio has a buffett with AYCE lobster tails!!! I didnt want to leave!!!
