I dig Interpol a lot, but there are a ton of other bands I just don't get...Bright Eyes being an example.
But the question was about bands you initially liked/loved and then couldn't listen to. I was a huge Oasis fan from 1994 to about 1997, but the inflated hype around them really ruined it for me. Be Here Now was a crap album, and after that I just couldn't dig them. Smashing Pumpkins were the same. Loved Gish and Siamese Dream, Mellon Collie had some good songs. Then I saw them 1 night before the infamous OD in NYC and I just thought "why am I even here?" I never quite got over that experience of watching them suck so bad when the other times I saw them they were great. I guess it's the fine line between how gracefully an artist copes with success vs. how badly they sell out/inflate. And I hate to use that term, but bands CAN be famous and not sell out. Look at Radiohead, adored by fans and critics.
And then there are those bands who never sell out...they just get hyped so badly that after a while you don't want to touch their records because of all the negative associations that go with liking them. Let's face it, most of us are musical snobs to some degree. Interpol has been hyped a lot, and I can see why people are tired of them. I totally feel that way about Franz Ferdinand and a lot of "those" bands. After a while, I just don't feel like listening to them because everyone is saying how great they are. I feel the same way about movies...when everyone tells me I HAVE to go see it, then I feel hesitant to go.
