Online reviews were rather tepid and paled in comparison to Sofie Paradisi...(which I had and thought was good)

did you try the matilda lambicus?  based on the name, i would expect it to be a funkier/barnyard'ier/etc version of matilda.

as an expert on this subject (i.e., i've had both), sofie paradisi was incredible, and a huge leap from sofie regular, and matilda lambicus, as james ford has so eliquently put it, was rather ordinary.  high drinkability, but none of the characteristics that you describe really pop out.  however, i would drink 100 of them.

I've never gone to zwanze day or been to church key.  Trying to figure out when to go, what to expect, cost, and any other details.  Any advice on when to try to avoid the rush and how best get the full experience is greatly appreciated.

I've been twice, it's getting crazy every year.

Show up before the place opens, trust me...

i showed up at 130pm and they still had almost everything. 

the beers... man, i don't know. i don't know why people lose their shit for cantillon. i thought their kreik was fantastic, zwanze good, and the iris grand cru average. i'm not sure i'd ever seek them out, but if i saw them on the shelf i'd snag a bottle.

I think we threw away half a glass of Cantillon Kriek when we were in Bruges. Not sure if it was the beer or us being beered out, or a combination of both. Count me as not a fan.

it won't be bad, it just won't be the same beer.  the hops will have faded a lot and since this beer is all about the hops...

Doesn't seem very hard to get. Go on craigslist search for them.
