I know nothing about empanada dough, but is there a reason it takes so long to make?

The life partner and I have really gotten into pasta making over the pandemic and really perfected a few recipes... Additionally, have done pizza dough that I'm assuming is somewhat similar to empanada dough?

I would definitely consider starting a cooking thread but my life partner does all the cooking and I just sit and watch. It makes a perfect relationship, for me. And then I have to clean the entire kitchen and all dishes. Which makes it a perfect relationship, for my life partner.
